New Recipe Number One

I know, I know... Here it is the end of the third week of the new year and I have yet to share with you a new recipe.  There is a reason for that.  I have not really been meeting my goal (not resolution) for the new year.  Today we are going to my parents house for dinner so I am bringing the dessert.  I have several Christmas oranges still around so I looked for a use for them.  I came up with Orange Applesauce Cupcakes from The Taste of Home Baking Book.  I will share my recipe with you.  I substitute I Can't Believe It Not Butter for the real butter and Splenda makes a brown sugar blend that I am sure you could try for this recipe.  That is if you are on a New Year's Health Plan.  I would probably leave off the icing in that case as well.  Or better yet, make them following the recipe, eat healthy, exercise and enjoy a small portion of a yummy sweet treat every now and then.  Moderation is the best plan.  I digress...

Orange Applesauce Cupcakes

Prep:  20 min
Bake:  20 min + cooling
Yield:  1 dozen

6 T butter, softened
1 c packed brown sugar
1 egg
1/2 c unsweetened applesauce
1 t vanilla extract
1 t grated orange peel
1 c all purpose flour
1 t baking powder
1/2 t salt
1/4 t baking powder
1/2 cup chopped pecans

Frosting:
1/4 cup butter, softened
2 cups confectioners' sugar
1 1/2 t grated orange peel
2-4 t orange juice

In a mixing bowl, cream the butter and brown sugar until light and fluffy.  Add egg; beat well.  Beat in the applesauce, vanilla, and orange peel.  Combine the flour, baking powder, salt and baking soda;  add to creamed mixture.  Stir in the pecans.

Fill paper lied muffin cups half full.  Bake at 350 degrees for 20-25 minutes or until a toothpick comes out clean.  Cool for 10 minutes before removing from pan to cool completely.

For frosting, in a small mixing bowl, beat butter and confections' sugar.  Add orange peel and enough orange juice to achieve spreading consistency.  Frost cupcakes.
